Pangea Concepts is a Denver-based hospitality group founded by Chef José Avila, dedicated to preserving and evolving regional Mexican culinary traditions through restaurants, cultural programming, fermentation, and agave spirits.
The group’s flagship concept, La Diabla Pozole y Mezcal, is a Michelin-recognized restaurant in Denver’s Ballpark neighborhood known for its deep exploration of traditional Mexican pozole and an extensive mezcal program highlighting ancestral agave spirits. Since opening in 2021, La Diabla has become one of the city’s most distinctive dining destinations.
Pangea Concepts is expanding its portfolio with several complementary concepts, including El Borrego Negro, a barbacoa and lamb-focused concept that has received national recognition, including James Beard Award semifinalist and finalist nominations, and Malinche Audiobar, a mezcal-driven listening bar and charcoal kitchen that blends music, culture, and hospitality.
Beyond restaurants, Pangea Concepts produces cultural programming that celebrates Mexican culinary traditions, including Pulquefest and a series of seasonal festivals focused on ingredients such as mole, chiles, mushrooms, and pre-Hispanic fermentation.
The company is currently developing a multi-property hospitality project in Denver’s Ballpark neighborhood, including the expansion of its restaurant footprint and the redevelopment of a nearby warehouse into a food hall and cultural culinary destination.
