Pizzeria/Italian Restaurant

Opening/starting a restaurant with me.

I am looking to open up a pizzeria/Italian restaurant and Enoteca. I have extensive pizzeria and restaurant knowledge. I have been in and around the industry for a great part of my life, and would like to open up a place of my own. The concept I have in mind is a pizzeria with 3 styles of pizza: 1. An authentic, wood burning Neapolitan style pizza using ingredients from Italy. 2. Being in Chicago or suburb of Chicago, a Chicago tavern/deep dish pizza. 3. A true in house made Gluten Free pizza. In addition to the pizza, I would like to have regional Italian pasta dishes and entrees. The focus is on authentic. Actual recipes from the different regions of Italy.  The Enoteca part of the restaurant would allow for patrons to purchase bottles of the wine they had with their meal at the restaurant, to take home.
