Pizzeria Fontana will be a family style, Italian pizzeria located in Either Roseville, CA, Rocklin, CA, or Lincoln, CA. Pizzeria Fontana focuses on authentic, Neapolitan style pizza using premium Italian ingredients. Pizzeria Fontana will have a small but dynamic, all homemade menu of pizzas, appetizers, and desserts to choose from that have been developed over time.

- Pepsico products; The Fontana family has ties to Pepsico allowing for a easier supply chain
- Casazza & Gilmer Family Wine, The Fontana family makes their own vaious blends of wine and has legal authorization to sell in the State of CA.
- Beer; Birra Moretti, Nastra Azzurro, Peroni. Italian beers only.
Dough will be made each day in increments that yield 50 individual pizzas, each weighing 280 grams. The dough takes 24 hours to ferment at a room temp of 68-70 degrees F. Bulk fermentation of dough will last 16 hours. After 16 hours dough will be cut into 280 gram individual dough balls and left to rise for an additional 8 hours, completing the 24 hour fermentation. Dough will be consistently 62% hydration and 3% salt making it an easy process to produce dough quickly and eliminating confusion and mistakes. Pizzeria Fontana will need 2 wood fired ovens produced by Forno Piombo located in Napa, CA.

1. Target Consumer
- The Roseville, Rocklin, Lincoln complex of the greater Sacramento Area has middle, upper middle, and upper class consumers willing to spend disposable income on good food. Pizzeria Fontana will target these consumers, especially middle to upper class families looking for a quick take out option on week nights or a nice setting to sit down for pizza on a Friday or weekend night.
2. Setting Appeal
- Pizzeria Fontana aims to have an atmosphere where families can come and either sit and enjoy a good meal or take their meal home. Pizzeria Fontana also caters to group style parties that are looking to share pizza and drinks. The Roseville, Rocklin, Lincoln complex is a perfect setting because winters are generally mild and less dry allowing for continuous outdoor dining throughout the year. Spring and summer days are hot but nights are extremely comfortable making this area the perfect setting for outdoor dining. Live outdoor music will also be an element Pizzeria Fontana explores. Indoors will be decorated with family photos, various Italian memorabilia, Italian cooking décor, and other interesting wall décor. TVs will be available to show big sporting events when on. If no big sporting events or local teams are playing then TVs will be left off to promote the family and group experience.

4. Selling and Promotion of Pizzeria Fontana
- Pizza will be sold by the whole pizza. There will be no "by the slice".
- Depending on the type of pizza, pizzas will be sold from 14-18 dollars each
- Soft drinks and beer will be sold at industry standard
- Wine will be sold by glass or bottle, pricing TBD
- Promotion of Pizzeria Fontana will be mainly through social media including Facebook, Instagram, Tik Tok, and the online website where orders can be placed online. At Pizzeria Fontana there will be no delivery. Pizza will be either picked up by the consumer or eaten in. Delivery is not an option because the quality will go down if the pizza sits too long. Pizzeria Fontana wants to ensure the best quality when eaten.

- Pizzeria Fontana will be primarily staffed by members of the Fontana family. However, there may be need of additional support. Any compensation will be in accordance with CA minimum wage. TBD.
