We are two highly trained and experienced restaurant professionals looking to change the way French culture, cuisine and service are offered in NYC. We have a combined 25+ years experience working for such restaurateurs as Daniel Boulud, Grant Achatz and Thomas Keller. A “small-plates,” cocktail-centric space to open in Spring/Summer 2021 will rethink the post-pandemic industry's approach to dining in general and French cuisine specifically. We believe that, despite the current state of the industry, we are all now presented with a window of opportunity to be at the forefront of what a post-pandemic restaurant scene will look like in Manhattan. The real estate market and lower startup capital combined with a carefully structured business model minimize both upfront and operating costs, while still offering a remarkable dining experience.
