Certified Executive Chef with over 30 years successful operations experience is seeking investors to open new restaurant in the Space Coast area of Florida. The concept revolves around old school concepts like scratch cooking, fresh, local fresh seafood, hand-cut steaks, craft cocktails and impeccable service. The project is being led by Johnson & Wales and Cordon Blue graduate Ace French. Chef French’s resume reads heavy with culinary experience as well as service management and P & L management. Chef French opened a small, highly successful fresh seafood concept called, “Two Dudes Eatery and Market” in 2011 and sold the concept in 2014, where the new owner has opened several more units. Chef French has worked for corporate entities like Marriot Corporation and Houston’s Restaurants. In the last several years, Chef has worked opening a new restaurant in Hyannis, MA called Gannon’s Tavern. Before Covid, Gannon’s was on a pace to do in excess of 3M per in in a 105-seat space. Chef French feels with the explosive growth and population shift, the space coast in preparing for a robust boom.
