I am working towards putting up a Beef and possibly pork processing facility. I raise my own beef and solely direct market to consumers to control my price. I, like many others have seen a shortage in availability of this service over the past 10 years. Pre COVID it was a 1 1/2 year booking for appointments. After COVID it is two to three years backlog.
I was a butcher in this exact industry for 13 years. I have been in the beef production and meat sales for over 20 years. I have a great skill set to take advantage of this need. I am capital short. It takes infrastructure to comply with USDA food safety requirements. I have a business plan set, a projections with verified assumptions, and a marketing strategy.
This is an opportunity to not only be a service to farmers all across Wisconsin and northern Illinois in their drive to direct market their own product, but also to team up with many farmers and work on creating a beef brand that we can then market, as LOCAL and more desirable attributes like hormones free, free range, etc, to grocery stores, restaurants, schools.
The bottle neck is in the processing. COVID has exploited why we should not leave our meat industry in the hand of only 4 companies. The people want change and farmers are ready to give it, they just need this service.
