My wife and I are looking to start an ostrich farm in Northern Alberta. We would like to grow to, 10,000 feeder birds with in 5-10 years.
With our contract option, we can gross profit up to 50% and would have access to mentors, that have been in the ostrich industry in Canada for over 25 years.
A few facts about ostriches:
Acidification (pH) is closer to beef than to poultry 
Low level of fat and cholesterol 
Favorable Omega 3 to Omega 6 ratio 
Abundance of bioactive compounds (e.g. peptide anserine)

We fully believe that ostriches are the farms of the future. With the shift of focus on the environment ostriches produced meat with less C02 and water being used compared to cattle.  The meat is leaner and heathier than beef with a higher omega 3 levels .
