A Little About Me, Stan Hilbert, Founder & Operator
After moving to the United States from France 28 years ago, I dove headfirst into the restaurant world. From my early days at a small neighborhood café in Mission Hill to the fast-paced wine bar and bistro scene in downtown Boston, I’ve worked in nearly every corner of the industry. Seven formative years at the iconic L’Espalier shaped my approach to hospitality, where I honed my skills as a server and sommelier. Later, I became General Manager and Beverage Director at Ten Tables in Jamaica Plain, further solidifying my love for creating memorable dining experiences.

In 2016, I opened Forage, a neighborhood bistro in Cambridge where I could combine my fine dining training with my love of wine, beer, and cocktails to create a space that’s warm, approachable, and rooted in community. Forage has been a joy—connecting with regulars, sharing my passion for honest hospitality, and offering a down-to-earth experience in a world that often feels anything but.

After living in Dedham for the past 10 years, I’m thrilled to bring that same spirit of hospitality to my own backyard with Few & Far.

Few & Far is a farm-to-table restaurant located in Dedham, MA, where we’re bringing together the freshest local ingredients, thoughtful hospitality, and an elegant yet approachable dining experience. Our mission is to celebrate the bounty of New England’s farms and producers while fostering sustainability, community, and an appreciation for real, honest food.

Led by Eric Cooper, the talented chef behind Forage’s innovative and highly praised menu, our culinary team will deliver dishes that highlight the best of the season. The front-of-house team will be led by me, combining my decades of hospitality experience and genuine passion for creating a welcoming environment.

We’re proud to fill a gap in Dedham and surrounding towns by offering a true farm-to-table dining experience—unpretentious, high-quality, and rooted in connection.

Use of Funds
Your investment will directly support Few & Far’s launch, including leasehold improvements, kitchen equipment, inventory, and marketing. It will also cover hiring and training, as well as working capital to ensure smooth operations during the critical early months.
