·   Nichole's Fine Pastry - doesn't have a breakfast menu. It opens at 10 am. 
·   BernBaum's - opens at 7 am. Competitive pricing but on the fancy side (e.g., Romanian sausage + egg)
·   Atomic Coffee - opens early with basic pre-made Egg & Sandwiches around $5
·   Young Blood Coffee - pastries and hipster toast - that's it
·   Level 2 Eats + Drinks (within the downtown Radisson Hotel) - traditional breakfast foods with omelets. Highest price point. 
·   Babb's Coffee House - Bagels 
·   Twenty Below Coffee - limited options (toast, poached egg, granola, oatmeal, waffle)
·   Boiler Room (ranked 23) offers an All-Day Brunch starting at 11 am Monday - Friday.
·   Smiling Moose (ranked 28) opens at 7 am with a unique menu at $5-$10 per item
·   Fryin' Pan (even lower) serves all day but is much more of a sit-down experience with its own regulars.

Yes, the food should taste delicious; here are some other factors to consider when planning what to dish up. 
·   Food cost - what's the best we can serve at the least cost?
·   Food volume - what can we sell the most of to get better discounts from food suppliers? 
·   Food margin - what's the highest margin we can make per item?
·   Menu versatility - how many dishes can we make with the least number of ingredients
·   Operational efficiency - there's nowhere to sit, so what are the fastest dishes we can make as close to fresh as possible? 
·   Food delivery - what can we make that can be served in the same container to buy in bulk and drive costs down? 
·   Flare/Innovation - what are the small variations that can stand out in the market?

From the eggs Benedict, egg panini's, egg scramble, to omelettes.  Our margin can be high, for example $8/omelette or panini.

  • Poached eggs are made each morning at cart, and warmed until needed
  • Search for bulk price on english muffins OR utilized homemade biscuits for eggs benedict also.
