Established in Orlando, Florida in 2016, (Lafreje, LLC) operating under the trade name of “Gourmet Crepes Café & Catering” creates custom, made-from-scratch menus for special occasions such as weddings and corporate events. Gourmet Crepes Cafe & Catering menu was developed with five diverse menus in mind to include Italian, American, French, Caribbean and Latin. This is extremely relevant for the area of Central Florida which boasts a very diverse population. With 3 full-time team members, all of whom have 30+ years of global experience in the culinary arts. We hire from a trained service industry pool of associates to meet event needs. Gourmet Crepes Café & Catering is appropriately named. From preparation to presentation, the management team of Gourmet Crepes Café & Catering uses their knowledge to create legendary events for its customers. The careful coordination of their culinary skills and the operations team blends menu creations and logistics into a seamless experience enjoyed by both guest and host alike. From the simplest party to the most lavish, casual or elegant event, Gourmet Crepes Café & Catering is ever mindful of the details, assuring a successful event, regardless of the budget. The company partners with over 40 wedding and event venues throughout the Central Florida area. It also caters events for a number of Central Florida municipal governments as well as business to business events.
The current four leased spaces alone cost $2000.00 for rental space for a commercial kitchen, warehouse space, additional storage space for equipment and conference room space for client engagement. The new space is $2600.00 monthly and it has 3x more space (1000 square foot space versus 3000 square foot space). This consolidation of facilities will provide greater operational efficiency and tangible cost savings that is a pre-requirement for sustained future growth and increased net revenue generation.
Being in one consolidated space, will permit the booking of concurrent and simultaneous clients back-to-back every day of the week. This will triple the number of clients that can be engaged and serviced in one week which ultimately results in increased event bookings. There is also the potential to broaden the geographical target market to a 150 miles radius across Central Florida.
The build out of the leased commercial space will be designed to be a fully functional licensed commercial kitchen space, storage space, with an ADA compliant bathroom and a customer engagement/service marketing room. There has already been an expenditure of approximately $160,000 towards the new location build-out. There has also been an additional $17,000 spent for associated equipment for this facility build out for upgrading two HVAC systems, a 9 foot kitchen hood, regulation grease trap and propane installment. The project is 75% complete. The owners have an additional $18,000 on-hand to commit to completing this transition.
The most exciting part is that the State of Florida health department has already approved our application. They are simply waiting to do the final inspection. When that is done the kitchen can open immediately.
