SECTION 1 - EXECUTIVE SUMMARY

The Business

Anja’s Country Kitchen is located in “The View” Hotel, utilizing the existing restaurant facility which offers a beautiful view of Stewart Lake. We will be open for business from 5am to 9pm, Monday through Friday and Saturday & Sunday from 8am to 10pm. The Hotel is at 90% occupancy, most of the construction crews stay here.

We offer home-cooked Canadian & German cuisine with some European Specials, catering mostly to blue collar workers and families. Aside from regular breakfast service, ready-made Breakfasts and Lunches ToGo will be a main focus Monday to Friday: hot & cold sandwiches, salads, fresh cut fruits & veggies, pastries, yoghurts, sausages & cheeses and fresh, microwavable meals, soups & chili.
For lunch we have a delicious selection of Schnitzel, Burgers, Salads, Soups & Chili and Belgian Style Frites with a variety of dipping sauces made with fresh herbs and homemade mayo.
In the afternoons a Coffee & Pie (or cake) Special will attract people to come in for fresh pastries, homemade pies and available specialty coffees (espressos, cappuccino, lattes).
For dinner we offer a delectable choice from beef, pork, chicken, lamb, and fish dishes, freshly prepared.
Steak Nights are planned for Saturdays, with different cuts throughout the month: Rib-, New York Strip-, Porterhouse Steak and Prime Rib Roast.
Sundays we serve Brunch from 10am to 2 pm with a seasonal or local feature of meat, fruit or vegetables.
Daily changing Specials and a seasonally changing menu will help to keep guests coming back.


The Market
The future looks very promising in Fort St. James. There are a number of large construction projects going on: the new hospital being build, the new RCMP building, road construction. For this year there is a large Airport extension planned as well as exploration into the high-grade Nickel deposit north of town. 2 subdivisions have been logged and await development. 
There are many out of town workers here and no place to get breakfast or lunch ToGo early in the morning. Restaurant choices are limited to 2 Chinese restaurants, 1 Pizza place, the Pub, all open at 11am. 3 seasonal choices are FSJ National Historic Site, the Golf Course and Little Jimmy Fry. Subway opens at 6am, too late for the construction crew, who starts work at 6am. We offer home-cooked Canadian & German cuisine with some European Specials, catering mostly to blue collar workers and families.


The Owner (Introduction)

My name is Anja Hoehle. I was born in ’64 and raised in a large German family. Discipline, honesty, and self-motivation has been deeply ingrained into my core. 
My vivid imagination and the ability to see the bigger picture always had me dream big and seek the road less traveled. 
Immigrating to Canada in ‘93, operating a restaurant, trucking, logging, farming, gold mining, my life has been full of challenges. It is my nature to joyfully immerse myself into anything I choose to do. I learned to trust and rely on myself to become the best I can be and to never give up. Right here, right now is my greatest challenge yet; to take on a workforce of diverse peoples, to coach each individual to become a member of my team, a family. To create a space of joy that will radiate out into my community and truly make Anja’s Country Kitchen a Family Restaurant.


The Owner (Skills)

After earning my Bachelor in Trade at the Butcher in '82, I worked in different branches of the Meat & Service Industry for the following 10 years: Meat Department Manager, Caterer, Food Truck Operator, Meat Cutter, Meat Processor (sausage making, slaughter, ready-to-cook meat prep), Waitress and Breakfast Cook & Baker, to name a few.
These skills that I acquired working in the German Service Industry have opened many Canadian doors for me.

With an expected average of 110 customers per day (40 for Breakfast, 25 for Lunch, 10 for Coffee & Pie in the afternoon and 35 for Dinner), my monthly sales forecast averages $92,000.00, projecting a cash flow of $1,100,000.00 for the first year.

Financing and Security
I am seeking a 3 year loan for a total of $120,000.00 at 12% interest, broken down as follows:

$57,200.00 for kitchen equipment (coolers, ovens, food warmers, auto-fry machine) from Ideal Food Equipment, Surrey, BC.
$16,300.00 for kitchen small wares (pots & pans, table ware, utensils, steamtable inserts, carts, popcorn machine and more), from Northern Food Equipment, Prince George. 
$73,500.00 Total, Secured.

$ 9,000.00 for 1st  and last month rent & utilities.
$ 4,000.00 for Traxler Haines, Prince George, Lease and Loan documents.
$ 3,000.00 for MNP Accounting and Wilson M. Beck Insurance, Prince George, $5 mill. liability.
$20,000.00 for initial grocery order from Gordon Food Service, Snow Cap, Pepsico
$  6,000.00 for Independent Contractors to turn on Gas, install extra outlets, service equipment; Brian Lodge, Gas Fitter, J-Man, Electrician, Polar Refrigeration.
$ 4,500.00 unforeseen costs.
