Rabbit Food is a made from scratch, quick service restaurant serving plant-based meals with a mission of making food that supports health available conveniently to consumers. We are a husband-and-wife team with a combined 30 years of restaurant experience. We have been part of opening teams for new restaurants, and have been involved in restaurants from the ground up, in all positions. We have expertise in customer service, food prep and production, inventory management, book keeping and vendor relations. Based on projections, Rabbit Food is expected to have a net profit of $126,000 annually.
Our financial projections are based on 30 percent of what the maximum potential of the business is. Being a quick service restaurant, we will be able to operate without additional staff, allowing us to keep our overhead very low. We have identified an ideal physical location in our community; it is available for rent at under $1,000 per month. We plan to work with local and national vendors to source high quality products at the best price point available. As a scratch kitchen, we are able to keep our source whole ingredients at a lower cost than manufactured goods and adapt our menu seasonally and based on the availability of ingredients.
Our restaurant will appeal to consumers who are plant based, generally health conscious, and people who are aware of their meat consumption. Our city, Port Angeles, WA, is located on the Olympic Peninsula, which is the 5th most popular tourist location in the state. Port Angeles is the central location for the Olympic Peninsula and is located close to many major tourist attractions. Rabbit Food will be attractive to tourists and, like most restaurants in the area, will largely increase sales through nearly half of the year.

Sale of plant based foods were valued at $4.5 billion in 2019, and is expected to be valued at $7.5 billion by 2025. The Food and Beverage industry is expected to grow by 14% by 2028, which is among the fastest of all markets. Within the food and beverage industry, quick service plant based restaurants are the fastest growing sub category. Studies have shown that 40% of Millennials identify as plant based consumers. Additionally, 39% of non vegans/vegetarians incorporate plant based foods into their diets intentionally and on a regular basis.
