I’m an Executive Chef of a fine Italian restaurant located in Endicott, NY looking to start my own business. My idea is to run an entire catering business that has the capacity to operate out of a food truck. This will alleviate concerns about kitchen capabilities and make it possible to make money anywhere. I am a trained Chef looking to serve beautiful food for all kinds of events, such as weddings, graduation parties, block parties, and can also do smaller dinner parties as well.  I plan to make the truck itself aesthetically pleasing to the eye to help with marketing and advertisement and give people the ability to take photos with the truck to post on social media.  The vision that I have in my head would involve hiring my artist friend to hand paint a beautiful logo  with gold lettering on a matte black or hunter green truck. I am always striving to learn different forms of cuisine  and have the ability and knowledge to produce dishes with flavor profiles from different regions around the world. With this truck, I would have the capacity to either be a private chef for events and be able to operate for the most part in my own space.  I am set to graduate from SUNY Broome Culinary School in the Spring of 2022, but have already finished and succeeded in  all of my cooking classes. So far, I’ve taken classes such as Purchasing, Professional Cooking, Garde Manger, Specialty Cuisines, Baking Principles, Professional Foodservice Operations, Catering Operations,  Hospitality Marketing and Promotions, Bartending (though I’ve bartended for more than a decade), Menus and Merchandising, Special Event Interior Design, among others.  I do feel that I am fully ready based on my experiences at school and also my 13 years in the hospitality industry.  I have always wanted to be the person responsible for making an evening meal something more. Food can be beautiful, delicious, comforting, and quality.  Food encourages community and connection, and I think that is why I enjoy it so much. I have a lifetime of passion for cooking and entertaining, and I really feel that this idea could explode into something huge and could bring a lot of positive publicity to the culinary world as well as my local community.
